LA FINCA, by Susi Díaz, with over 35 years of experience, 1 Michelin star and 2 Repsol Suns, has begun a new chapter in its career with the refurbishment of its space. A space set in the countryside of the Bajo Vinalopó capital, Elche.
Susi Díaz, one of the most important chefs in our country, is committed to tradition, quality, sensitivity and love, all from the perspective of family. "Family is the engine that drives everything."
A native of Elche, Susi Díaz is a chef who works through effort in a completely self-taught way, with surprising results. Her great references are her grandmothers, as she puts it: "my grandmother used to tell me: Susi, this fruit or vegetable has travelled; always choose things in season and from the land, because they taste better."
At LA FINCA, a veiled atmosphere has been chosen where the visual focus is the table, as a metaphor for the altar on which to celebrate the gastronomic liturgy. Tomás Amat architecture studio wanted this experience to be lived in a personalized way.
Such a distinctive space could not be better accompanied than by our MICHELIN XL tables. Tables made special by their size and type: solidity, strength and great firmness. Throughout the restaurant, 22 tables have been placed for which the architects specified solid oak tops in keeping with the project.
